Our wild salmon selection includes five distinct species:
Sockeye Salmon — Known for its deep red, firm flesh with excellent fat content, sockeye is a favourite for sushi, sashimi, fillets, steaks, and smoked products. Fresh wholesale supply is available from late June through September.
Chinook (King) Salmon — The largest of the Pacific salmon species, Chinook offers rich, full-flavoured flesh perfect for grilling, filleting, and premium smoked salmon products. Available year-round through wholesale orders.
Coho (Silver) Salmon — With its fine-textured, deep orange-to-red flesh, coho is well-suited for sushi, sashimi, and a variety of cooking methods. Fresh availability runs from early July through October.
Chum Salmon — A versatile species with firm, deep red to bright pink flesh that is low in saturated fat. Great for steaks, fillets, canning, and processed salmon products. Available fresh from late June through late October.

Pacific halibut is the largest member of the flatfish family, distinguished by its firm, dense white flesh that is exceptionally low in fat.
